"Plant-based" and "vegan" get used interchangeably, but they're different shopping lists. Plant-based is about building meals from whole plant foods first — it doesn't carry vegan's ethical exclusion of all animal products, and it doesn't lean on packaged meat-alternative products as the default.
Whole foods first
- Legumes, whole grains, vegetables, fruit, nuts, and seeds — the actual bulk of the list
- Minimally processed plant proteins (tofu, tempeh, edamame) over ultra-processed meat-alternative products
- Whole grain versions of pasta, rice, and bread over refined versions
- A rotating variety of vegetables rather than relying on the same two or three
Plant-based vs. vegan
Vegan is an ethical framework that excludes all animal products, everywhere, including in non-food contexts. Plant-based is a dietary approach centred on whole plant foods, and some plant-based eaters still include small amounts of animal products occasionally. If you're shopping plant-based specifically for health reasons rather than ethics, that distinction changes what's actually on your list — a plant-based cart can include the occasional fish or egg without contradiction.
Batch-cooking the base
- Cook a large batch of a whole grain (rice, quinoa, farro) at the start of the week as a base for multiple meals
- Do the same with a legume (lentils, chickpeas) — both freeze well if you overshoot
- Build meals around these two bases plus whatever vegetables are freshest that week
